Caramel Stuffed Apple Cider Cookies

A while back I went to visit my close friend in Aylmer and considering our Pinterest habits we had a great different many things we wanted to try out. The one we decided to act on was a recipe for Caramel Stuffed Apple Cider Cookies. We went out bought the ingredient and got down to the baking. We used the following recipe from the blog Scrambled Hemfruit.

The cookies were delicious once we got them off the cookie sheets, we quickly discovered what a difficult task that would be. Many of the caramel centers fell out on the first sheet leaven the cookie to be delicious however not stuffed with caramel. After a little experimentation we came to the realization that with a little twisting of the cookie top we were able to remove the entire cookie from the sheet.

We also found these cookies quite sweet, great for the little brother who kept sneaking them but not so much for those who don't like super sweet sweets. Perhaps using less sugar or apple cider mix would solve this problem. In the end we loved the cookies, completely delicious, especially when warm with a melted caramel center.
